Salmon Orzo Salad

  • 2 lb Salmon (We like to use wild salmon from Butcher Box)
  • 1 lb Orzo (The size of a small box)
  • Cherry/Grape Tomatoes
  • 1 Cucumber, Chopped
  • 1 Red Onion, Chopped
  • Mixed Greens
  • Olive Oil
  • Balsamic Vinegar

  1. Grill or bake the salmon until the fish reaches an internal temperature of 145 degrees.
  2. While the salmon is cooking, boil water and cook the Orzo according to the package
  3. Chop the cucumber and onion
  4. Once the salmon and orzo are cooked, layer the mixed greens with the orzo, and add cherry/grape tomatoes, cucumber, and onion to the salad. Drizzle with olive oil and balsamic vinegar as dressing and enjoy!
